The concept of eating fermented food goes WAY back. By about 500 A.D., Koreans had found a new technique to preserve food for winter: burying jars of cabbage, cucumber or radishes mixed with strong spices. L. acidophilus was first discovered in 1890 by Dr. Ernst Moro. It has been studied ever since. Similarly, bifidobacteria were first isolated in 1899 in the diapers of breast-fed babies. L. rhamnosus wasn’t isolated until 1983. This species is known for thriving in the intestine and its ability to survive in acid environments. Another relative newcomer, L. casei, was only distinguished as its own species 50 years ago.

Recommended use
